With an already successful chain of coffee shops in key locations throughout London, Grind & Co were looking to take the next step to provide a more ‘sit down’ offering and capitalise on an evening trade for their growing fans and followers. Cafés in Shoreditch, Soho & The Royal Exchange soon grew to larger ‘restaurants’ in London Bridge, Clerkenwell, Covent Garden, Exmouth Market, Whitechapel & Greenwich; with Drinkonomics providing key hospitality and wine industry expertise. Setting the tone for the wine department's delivery and rollout, Christopher’s style resonated with Grind as they worked in partnership to curate lucrative wine lists and all back-of-house wine operations for their new multi-million pound tapas style dining concepts, with diffusion lists implemented across all café sites also. The success of the tapas dining concept continues to be rolled out as part of a multi-site company expansion plan that also includes a new roastery and barista training lab alongside a range of pop-up and permanent partnerships including a deal with transport hub specialist SSP to provide sites in airports and train stations across the UK and Europe.
